Beef Nachos

Makes about 40

½ lb lean ground chuck
1 tablespoon freshly squeezed lime juice
2 tablespoons finely chopped red onion
1 tablespoon finely chopped pickled jalapeno chiles
¼ teaspoon salt
¼ teaspoon chile powder
¼ cup finely chopped cilantro
1 cup grated queso fresco, cotija, or Monterey jack cheese
40 tortilla chips
½ cup sour cream, for garnish
40 fresh cilantro leaves, for garnish

Preheat a broiler.

In a bowl, stir together the beef, lime juice, onion, jalapenos, salt, chile powder, cilantro, and cheese. Gently spread each tortilla chip with a thin layer of the mixture (about 1 tablespoon per chip). Place on a baking sheet and broil 6 inches from the heat until the meat is completely cooked and the cheese is melted, 3 to 4 minutes.

Top each nacho with a dallop of sour cream and a cilantro leaf. Place the finished nachos on a serving platter and serve immediately.
